You'd be better off buying a native M1 MacBook Air. They're fairly reasonably priced and you at least know that you'll get native support for macOS for many years to come. No one really knows when Apple will pull full support for Intel, and they don't support the 11th gen chips natively. If you need to have both Intel and macOS, you can still buy the older Intel MacBooks with 10th gen chips.

 

If you really have to have a Hackintosh laptop with Intel though, I'd go for an older 10th gen chip, as Apple natively supports those, so you'd be less likely to run into issues there.

 

I do just want to add though, that whatever you do with a Hackintosh, you'll never have an incredible experience, and will run into a tonne of issues, even when using chips that Apple has natively supported.

Get as native as you can with the CPU and the GPU, meaning you will need to get AMD GPU which is rare with 10th &11th.

Hackintosh don't support nvidia gpu, bare that in mind.
