everything is compatible and as for the 3700x vs 5600x I would personally go with the 5600x, if you're main task is gaming. Your board will be ryzen 5000 ready with a bios update, there should be a button on the IO panel of the motherboard, you can watch a youtube guide on how to update the bios with a usb drive and the flash button if you need help.

B550 works out of the box with 3000 series, except for those with a G, which are not supported at all. You're fine. For 5000-series, you'll need to update the BIOS first, but it'll work fine. If you were just gaming, I'd say get the 5600X, but for productivity, you'd be better served sacrificing a little single core performance for the extra two cores with the 3700X. If you want the best of both worlds, spring for the 5800X.

Stock cooler is okay, but you're going to want something better sooner rather than later. AIO is unnecessary, though. You'd do just fine with a good single tower cooler like a Noctua U12S. If you want to go really overboard, you can get a D15, and actually exceed the cooling of all but a 360mm AIO.
