So my question is this. my plan was to get a Ryzen 9 5900x but since its been almost half a year since i got the first part of those being my graphics card so at this point i just want a processor that i can get but I don't know which.
I basically have 2 options but don't know which I should get

Option 1: Ryzen 7 5800x

or go last gen

Option 2: Ryzen 9 3900x

Just get the 5800x.  Unless you need all the extra cores?

The 5800x will perform better in most games and the 3900x will be better in multi threaded applications so if you are planning to play mainly games I would suggest the 5800x.

Honestly, if you are playing at a higher-res with settings maxed out it wouldn't really make any difference, as most games become GPU-bound. That being said, if you are into e-sports games that are very CPU-heavy and want to run at insane FPS, then 5800X would be the better choice.
