No. PSU does not cause input lag, and 80+ Gold and 80+ Bronze are measurements of efficiency.

Only way to be sure is not buy a bronze one. If you are really that concerned then it’s worth the cost right?

Bronze, Silver, Gold... they're measurements of efficiency. How efficient the power supply is at converting the AC power from your house mains (115VAC / 230VAC) to DC power used by the computer (+12V, +5V, +3.3V)
