Will it be fast enough and can it handle multi-tasking?

Yes, 5600x is a great multitasking CPU. will easily hand what you're going to throw at it.

I have a 5600x and regularly leave a bunch of stuff open whilst playing games, handles music production just fine. An anecdotal but, I guess, relevant example would be that it only took a few minutes to encode a 1000+ FLAC library to MP3 whilst doing some other light tasks (browsing, voice calls, etc) without getting all that hot at all.

finally escaped fm2+

Should I buy any parts right now? e.g the case?

I wont be buying the parts for along while. And just past few days the case price has gone down and i might just get it before it goes back up.

No, don't buy anything until you're buying everything.

Don't ask to ask, just ask... please 🤨

If you're not going to buy this for "a long while" then don't even bother making a list, it'll be outdated by then. Look at it when you're ready.
