I can't explain it correctly because It's a weird noise but it sounds like a quiet thudding/thonking noise if that's even a thing whenever high-data/transfer/download/accessing is happening and I know for a fact that It's the ethernet port because it doesn't make the noise whenever I unplug it.

Anyone got any ideas on how to get rid of it? It's not a faulty MOBO either I've had it on my three other PCs before this one so I feel like I can rule that out unless I've just had 4 bad MOBOs

I never experienced a thudding noise on a NIC, however, I do get a buzzing / whine noise from my Asus WiFi PCIe card. Sounds pretty much like coil whining, as soon as some network traffic goes through. In my case, the culprit is the indicator LED that's flashing when sending or receiving data. Some managed to turn it off with a registry patch, while others removed the LED completely.

You could try turning off the LEDs but chances are that the sound is coming from inner curcuits. Best solution is probably to just live with it.
