Hi im looking to switch my server os from ubuntu server to proxmox and was wondering if my config was enough.

Im running a ryzen 5 2600, 16gb of ram

Would that be enough? I intend to have my plex server on it a pihole and maybe a minecraft server and the rest for tinkering would I be short in specs?

You have more than enough specs here. I have a similar setup with Nextcloud + Jellyfin on a Proxmox-virtualized Xeon L3426, still having leftover computing resources to parcel out.

On the other hand, you might want to throw in a graphics card for GPU accelerated Plex transcodes. A standard GeForce will work as well as a Quadro if you puts in some modifications to your QEMU settings to allow GeForce being passed through and patch your driver to allow more than a few streams of NVENC. I threw in my unused GTX 1060 3TB for that.
