A fan curve is about a balance between noise and temperatures. The right balance is up to some variables, like personal preference (what is loud and what is not), ambient temperature (how warm is your room), components, etc.

 

There will be no one 'correct' fan curve, but any fan curve is correct as long as it keeps your components cool, bonus points if your PC is pretty quiet too.

As @minibois said, it's a lot about preference.

 

But personally i liked my fans to run at a static speed when air cooling, because for me louder static fans are less distracting than quieter fans that change their speed all the time.

 

Now i use water cooling and run my fan curve according to water temp, which is changing slowly, and so are the fans.

If someone did not use reason to reach their conclusion in the first place, you cannot use reason to convince them otherwise.
