How secure are tongfang laptops? How much graphics power do i really need?

Being a Chinese ODM, how much access will the company have to my device, except obvious ones like MAC address, if i run linux on my laptop? 

 

Also, how much graphics memory do i actually need, i just started college and my seniors have recommended at least a 2gb gpu. i will mainly be using autoCAD, pcb design software and machine learning algorithms in my 2nd year and beyond, and some casual gaming, though i want to be able to play titles like CP 2077.

Cyberpunk's recommended GPU is a GTX 1060 or better, so on a laptop, that'd be like GTX 1660 or better.
