Hey, pretty new to overclocking as was looking to start here.

I followed a guide and was looking to get 5.0 on all cores. I started at 1.3v. I was able to lower it down to 1.275v but I'm not too sure how to test if it is completely stable or if I should try to go lower.

My temperatures seem to be normal at around 30c+ idle and max i've seen at 65c and it has not crashed at all yet. I've only tried aida64 to test it but from what I've seen posted, it's not the best for testing? Any advice on what I should do / try next would be great.

Specs: 9700k, h150i pro, z390 Aorus Ultra, 2x16 gb ddr4 3200mhz Corsair LPX, 2080ti MSI Trio x, Corsair RMx1000

i run cinebench r20, and 3dmark timespy (CPU) to see if its stable, if you're able to run those fine, and dont have any crashes/ BSOD during normal use you should be fine, your voltages are nice and low, so those aren't a problem.

Alright sounds good. So if the voltages end up being unstable, what would be a max voltage I should try to stay under?
Also when checking something such as HWMonitor, I can see that the VCore is what I have it set to but there are some others such  as VID and VIN #1-7 that can seem pretty high. Is that something to worry about?

if you haven't messed with them i wouldn't worry about it, i'm not to knowledgeable when it comes to the advanced parts of overclocking.

i would keep your cpu under 1.4v.

AIDA64 isn't heavy enough for stress testing. I was able to run AIDA64 overnight on my i5 9600K but it crashed in 10 minutes when I started gaming. Cinebench R20 isn't long enough and Timespy is more demanding for the GPU.

I currently have i7 9700K overclocked to 5Ghz and 1.310V without AVX Offset. I used Prime95 26.6 for non-AVX testing and OCCT for AVX-testing. Blender is also a great way to check realistic max temperatures since it can render for hours and it uses AVX instructions.

I used Prime95

prime 95 is completely unrealistic, and extremely degrading for the chip, blender is good, but realistically, if you run cinebench a few times in a row, it will give you a good idea.

I mean't Prime95 26.6 which doesn't use AVX. Newer versions push temps much higher.

Cinebench is just a short benchmark which doesn't stress CPU very much. On my old i5 9600K I was able to finish both Cinebench R15 and R20 at 5.1Ghz as many times I wanted but still I couldn't even get 5.0Ghz stable for everyday OC without getting too high temps and I had to drop to 4.9Ghz.

that's an issue with temps, not per say stability, the chip was stable, you just didn't have cooling to keep up with it
