3800x vs 5800x

Currently getting ready to finish my new build (got everything other than CPU and GPU), been waiting for new launches, but not sure if I've got the right plan now with the 5800x price increase. I was planning to go 5800x and 3070, but seeing the price increase, would a 3700/3800x and 3080 be a better idea for gaming? Either chip would be fine for my needs outside, so the question is just which combo would get the best gaming performance, since with the prices I've seen in the UK they should both end around the same price.
Playing at 1440p 165Hz, mainly CS, GTA5, Destiny 2, some AAAs now and again and Warzone (crossplay for the console mates).

If you can get a better GPU by going with 3000 series then that's what you should do.. Especially playing at 1440p.. I play at 1440p at well and just picked up a 3800xt for $280 so gonna wait for benchmarks before I choose to buy into 5000 series..
