Help understanding G Sync...

The G-Sync module doesn't increase the refresh rate of the monitor or the response time. That's all based on the actual panel. So far, there's only one or two supported monitors (I think) for G-Sync, and it's likely that you'll have to buy a G-Sync compatible monitor, rather than it being able to be used on every monitor. 

If I buy one of these monitors will I eventually be able to add Gsync to them to get the refresh rate higher than 60hz as well as drop the gtg from 5ms to 1ms?

Ehm. I'm pretty sure that 60hz monitors will be able to be upped to whatever frames you've got. (I might be wrong)

As of yet all i've heard is the 120hz monitors having G-Sync and it won't be that easy to fix yourself. 

If i we're you i would just buy a G-sync screen instead of planning ahead to do it on a screen that Nvidia haven't mentioned.

I'm pretty sure the only monitor that you'll be able to upgrade is the Asus 144Hz one.

 

Otherwise, there will be monitors that have GSync already installed, and you'll be able to purchase those.
