£1800 GBP gaming PC build - advice requested

Hi all

 

I'm looking to build a new gaming PC featuring the RTX 3080, to be built late this month or early next month (once the 3080 is available). Actually a pair of nearly matched builds, which I will refer to builds A and B. Budget for each is around £1800, willing to stretch a bit if it's worth it.
By nearly matched builds, I am thinking same motherboard, processor, RAM, GPU, and NVME SSD.

 

Usage & general requirements
High end gaming. Build A will sometimes also function as a minecraft server for at most 3 players, including one on the same PC.
Programming (nothing too taxing - my current i5 7600K handles it fine)
Media playback
Internet
No interest in RGP or transparent panels - they will be largely out of sight, so featurs like that will be wasted
No plans to overclock at this time, but overclocking support is preferred.
Both builds will be including secondary SATA HDD/SSD drives taken from previous PC's, that are not listed in the sample build spec below
No peripherals required - just the case and what's in it.
Fully modular PSU
Large storage requirements on NVME SSD, so large and fast is preferred.
Keeping the internals of each build as matched as possible is preferred but not essential.

Motherboard with integrated Wi-Fi is preferred but not essential


Specific requirements for build A
Case must be the Fractal Design Define 7 (unless there's a really really really good reason why I shouldn't). The reason is my current PC uses the old Define R3 which I absolutely loved (big black monolith with sharp, clean lines, and is whisper quiet), but it's seven years old and getting rather tired. The Define 7 looks better in every way.
Will be including a 5.25" DVD drive from a previous build
Will be including two 3.5" HDDs from a previous build as secondary drives
Will be including one 2.5" SSD from a previous build as a secondary drive


Specific requirements for build B
Budget must include the cost of a retail copy of Windows 10 home
Sound proofed case is preferred, but not if it means a lack of cooling affects performance (in which case, airflow case). A case that's easy to build in is preferred, but not if its significantly more money. A variety of cases suggestions to choose between would be greatly appreciated
Will be including one 3.5" HDD from a previous build as a secondary drive


Questions
My understanding is that Intel are still recommended over AMD for gaming, is that right?
Is it still the case that for a gaming build, there's not much benefit to the i7 over the i5? (that's why my first attempt at a build spec below is an i5). As mentioned above, build A does sometimes function as a minecraft server for a small number of people, but my current i5 7600K just about manages that already so I assume the current i5 10600K will be fine?

I still have no idea how to pick a motherboard


Notes
I went for the Noctua NH-D15 in my sample build below because reviews suggest the Define 7 is not great for airflow, so I figured that meant better CPU cooling would be good.
I realise that precise specs and prices for 3rd party RTX 3080's are not available yet, but I am assuming approx £740-800 price range. I'm using the Aorus GeForce RTX 3080 MASTER 10GB GDDR6X as stand-in in the sample build below, as it's marked as £749.99 on overclockers.co.uk

change the ff
-Motherboard (overkill for the cpu)
-LPX is pretty bad (it cant reach the advertised speeds)

-Samsung SSD'S are pretty overpriced 
-PSU is pretty overpriced look at the SUPERFLOWER LEADEX III
