(This is a first-world problem)

 

I have a Keychron K2 for my Macbook, because it was the only mechanical keyboard I could find that supported macOS.

 

The issue is I don't really like how it looks. I want an RGB keyboard where you can see the edge of the switches. The K2 LEDs are only visible looking at it top down.

 

Question: Is there a 60% mechanical keyboard (wired) that I could use on macOS, where the switches are visible? (Similar to the Corsair K70)

Get a k70? Every keyboard works with mac os.

Not sure about that, but you can find custom keycaps on sites like KBDfans.com that include all the keys specific to macOS.

Any ol' keyboard will work in Mac OS, you can even map the Windows key to the "Command" button. As for controlling RGB and other functions? I would assume that is dependent on that particular keyboard supporting Mac OS. Or if you can find one that uses it's own built in memory to store things like RGB commands, rather than rely on software.
