So I'm building a tower for my mom who does appraisals and has two 1440p monitors. Halfway through picking components, I realized I know what graphics card to choose for specific resolutions of specific games at w/e quality... but I have no idea what is reasonable for day to day use. I know she doesn't need a 1660ti for what she does, but how low can I go without her seeing a dip in day to day performance?

So her mointor resolution doesn't matter? I could get like a gt710 and it'd be fine?

If she isn't doing any demanding 3d work, then no resolution doesn't matter. A GT 710 should work, as long as it has the ports you need to connect to the monitor, specifically HDMI or DVI.

Go with an APU. Then you don't need a GPU at all.

Buy a slimline OEM PC with enough display outputs. Cheaper, sleeker, and she will probably appreciate the desktop real estate economy over any performance differences she won't notice.
