So my bios reset back to F5 (previously F31), using the Gigabyte website am I able to directly update my Bios back to F31 or the latest possible Bios without any hassle?

Ryzen 5 1600

16GB Corsair LPX vengeance 3000mhz (MOBO limits it to 2400 for some reason)

Gigabyte AB350 Gaming 3

It concerns me that it "reset" itself. That's not something that's typical of a UEFI to be capable of doing. Are you certain you had F31?

If so, A flash should be possible to get yourself back up to date.

As a side note, looking through the specs of your board, they do have kits validated up to 3200, but they are classified as manual overclocks.

I hadn’t saved my current bios (Rookie error)

I turned my PC like I do every morning, and it said there was no boot drive. I had to turn it off and unplug it from the main a good 3 or 4 times before it reboot with a message saying “BIOS has reset, please reconfigure your settings” after having a close look it is indeed back to F5. I only know it was F31 because I use the Gigabyte BIOS app to check for updates/MOBO lighting

What that means is the machine for some reason was unstable or had simply lost it settings and it resorted to default settings (Indicated by the "BIOS has reset, please reconfigure your settings” message).

A weak/dead CMOS battery can cause it or if you have been tweaking it, an unstable OC or something being right on the edge of stability such as RAM settings can cause it too.

No need to reflash the BIOS if you see that message, what I stated is all it means.

Be sure the little watch battery in the board is good, showing at least 2.9v's minimum but should really be at or close to 3.0v's, a little over is fine too and won't hurt anything.

You can first, load defaults to the machine, hit F10 to save and reboot, then see if it boots up normally without the message before doing anything else. If the battery is bad/weak it will not hold settings and you'll get that message everytime so... Check the battery and see.
If you can't check it's voltage, just replace it to be sure it's OK.

After that you will have to redo settings in the BIOS but from that point on it should hold settings for a good while at the very least, a few years TBH.

How would I go about updating my BIOS? the latest version, or at least the one I was running, had Chipset driver updates, and improved stability for USB etc.

Here is the link to my MOBO update list. Im currently Running F5, The latest version is F40. Can you help me understand what would be the best way to get all these latest updates stress free?

Sorry, Im a complete Rookie at this, and being someone who cant afford to buy a new pc/parts, I really dont want to brick my MOBO

The only time you'd really need to update a BIOS is if having problems.
If the system is working fine there is no real need to do so, largely due to the risk of bricking.

They do updates to either fix or add features, support for new chips, RAM and so on.

The Gigabyte site should have a step-by-step set of instructions on the flashing procedure if you must flash to the newest BIOS.

If you flash it, DO NOT powerdown the machine or reset it yourself during the flashing process, you will brick the system if you do.

Let it do what it's going to do on it's own and once you see it's rebooting, flash is done.

One more thing: All you need is the latest file, no need to flash them all from first to last.

When trying to enter my bios this is the message I get.. It doesn’t recognise my mouse or keyboard and I have to reset to boot to windows

It's possible the BIOS has become corrupted.

Still, read and follow Gigabyte's guide to reflashing the BIOS and see if that fixes the problem. If not, you'll probraby have to consider an RMA of the board if it's still under warranty.
