I am trying to get ethernet to the upstairs of my house to connect a router to for a better connection up there. back in the day my father ran some cat5e cable up through the walls when we were remodeling(this was 10 years ago) and we found finally where they ended and they did not have and the tips were bare so that we could bring them around upstairs as the room that they were placed in at the time was supposed to be a computer room. i was wondering if i could couple a cat5e and a cat6 cable together to be able to put a plug into the room that i am putting the router into or should i just stick with cat5e

Since you're limited by that Cat5e cable in the wall there's no point in using Cat6 unless you think you can repurpose it later. There are female RJ-45 to Female RJ-45 adapters which work fine for extending an existing cable. All you need to do is crimp ends onto that bare wire.

why i am asking if i should use cat6 is because after checking online they stores in my area only have cat6 in stock and the fastest way to get cat5e as of right now is to buy it on amazon and that could take a good amount of time so i am wondering if i could get away with using cat6

Cat 6 will work with cat 5e, you will just be limited to the slowest link, being the cat5e. It will work there just won't be any benefit vs using all cat 5e.

Cat6 is a higher rating. It will work with Cat5e but if you want to go 10Gbit it won't enable the run to utilize it. If it's more convenient for you to acquire Cat6 than Cat5e then you can use Cat6 no problem.
