I’m hoping you can help me with some advice. We’re locked down here in CA, luckily we’re able to work remotely so since business is slow my boss wants to do some virtual interviews of some experts to create video content (we’re in real estate). Ideally the highest quality but also super simple to use since I can’t be there to really help him and the interviewees aren’t really technical at all and this is all being done remotely. Ideally it would be great to be able to record both streams fully. We currently use Google Hangouts for our internal meetings but the quality isn’t that great. Do you have any recommendations? Thx & stay safe!!‬

Discord, teams, zoom, skype.

Listed from best to worst video quality. Then just use a screen capture software (or the built in windows game recorder which also just works on anything else) and that's it.

I also work from home right now and have a lot of remote meetings (we use Teams). I'd say voice is far more important than video. Some occasional glitches in video quality are much less disruptive than distorted voice, talking over one another, cut out voice and so on.

Unfortunately there's a lot of factors you don't have direct control over, like the applicants internet connection and the quality of their audio setup and speakers. On you own end, I'd make sure to invest in a good microphone at the very least (and enough bandwidth).
