you should check your Xbox's resolution settings.. Xbox's can run at 1080 30fps  or 720 60fps..

Correct me if I'm wrong, but doesn't most Xbox games run natively at 720p? If so, that could be a contributing factor. 720p on a large display doesn't look very pretty.

It's outputting at 1080p to my 23" Asus monitor (I forget the actual model name). It never looked blurry even when up close when outputting to my 1080p 32" TV via HDMI

have you tried hooking it up to different tvs? Also some monitors/ tvs has separate settings per device/input make sure to set it to default.
