How to migrate data from two drives to others

So I currently have a 3TB HDD and a 500GB SSD with my OS installed on the SSD and the programs/data mixed between the two.

I am going to be getting 2 2TB HDDs and a 1TB M.2 NVMe drive to upgrade my PC.

So is there an easy way to migrate my data including the OS and license over to the new drives or do you have to reinstall and copy all the data manually?

Also how can you link the two HDDs together do they act like one drive without sacrificing performance or reliability?

Thanks!

I used miniTool partition to move my OS from HDD to a SSD, and it worked like charm.

Does that allow you to move all the data and separate it or just move the OS?

I just used it for OS tbh, but it had tons of feature and I'm sure you can move data as well.
