Well, these are the specs on rockstars website:

So you should be fine med-high settings at 50-60 ish FPS, but take specs from game devs as a pinch of salt.

Mini DSP SHD Studio -> 2x Mola Mola Tambaqui DAC's (fed by AES/EBU, one feeds the left sub and main, the other feeds the right side) -> 2x Neumann KH420 + 2x Neumann KH870

 

(Having a totally seperate DAC for each channel is game changing for sound quality)

Your system shouldn't have much of a problem getting 50-60 fps at medium to high settings.

More like low to medium, RDR2 is *extremely* demanding and it has optimization issues with nVidia Pascal architecture.

It makes a big impact on what settings you actually tweak. 
There are a lot that eat up performance but dont contribute that much to looks. Spent 2hours tweaking my game , playing with all the AA , reflexion, volumetric lightning.

Managed to get constant 60fps with mostly high, ultra textures, and some minor things like reflection, some shadows and stuff turned to mid.
Completely ignored MSAA, that ate fps for breakfast , but maxed TAA + FXAA.

Dont use MSAA and medium settings should run just fine.
