If you're only running the game server GPU is basically irrelevant (using idle wattage of probably <10W), depending on how many people are on each server and how active everyone is you could pull a good amount of power for an 8700 but I doubt it, assuming the servers aren't maxed out you probably will only pull an average of <100W, my guess is around 80W with peaks above 100W.
(and that's wattage from the wall accounting of PSU efficiency.)
