what are people's thoughts on the logitech g pro keyboard? not talking about price vs performance, but just general quality of build and typing/ gaming experience.

You are fine with it being loud as fuck? If you are into that gamer aesthetic get this one https://www.razer.com/gaming-keyboards-keypads/razer-huntsman-tournament-edition it's only one good/decent/better than g pro board that Razer makes, PBT caps,standard bottom row, it's like a unicorn in Razer's farm of shit keyboards. Or you can get this https://www.amazon.com/SteelSeries-Apex-Mechanical-Gaming-Keyboard/dp/B07SVJJCP3 bit pricey but very nice for a gamery keyboard.

The typing experience will greatly depend on what you find comfortable in a keyboard. The regular Logitech G Pro non-X has Romer-G keyswitches which have been reported to be similar if not mushier than Cherry Browns, so it's up to you if you want those switches.

The Logitech G Pro X by comparison has hot-swappable keyswitches which allows the user to swap out the switches included in the keyboard, for example Cherry Reds to Cherry Browns, or more esoteric options such as Gateron Blacks or Zeal Tealios.

Can only imagine the build quality will be like any other 'gaming' keyboard out there from other companies such as Razer, Corsair, and SteelSeries. Same as always, nothing bad, but also nothing to write home about.
