Should I move my OS on my SATA SSD to M.2 SSD?

You will get a pretty good boost moving bootdrive, yes. 

Bought a 1tb m.2 ssd for games, should I clone OS onto the m.2 as well?

what Sata SSD do you have? its unlikely you will get a difference if its a good Sata drive. 

 

also what Nvme drive? is it even NVMe or is it just Sata.

What models are both drives? A good SATA drive can actually be faster and snappier than a cheapo NVMe drive.

Quick note, I did this a while back (When I swapped to my new system, Intel 3rd-Gen to Intel 9th-Gen so it was a big leap) and it took a bit to find the right tool to move the data over (assuming a reinstall would be inconvenient). There's a program called "BackUpper" that I believe is made by Aomei that worked perfectly for me...even swapped it from MBR to GPT and everything booted right up. It's got a 1-click "move to new SSD" function that took care of everything. I think there's a trial for it available but not 100% sure.
