Using Microsoft Word bugs me. 

 

I hate how there are two types of dashes. A short one and a long one. 

and I especially hate the line spacing. 

 

I want it so that no matter what, 1.0 line spacing with space after paragraph. 

 

I just want it to be simpler. Any suggestions?

Use Google Docs. Has basically all the functionality anyone could ever need, and doesn't look like industrial garbage.

^ If you want simple, Google Docs is pretty much simplified Word, Apple's Pages is similar but it's own thing, also simple once you get the hang of it.

Word, Excel, PowerPoint, the whole Office suite has been around for years and accumulated a massive amount of features to cater to all sorts of both home and enterprise users, it kinda can't be simple at this point.

Pages is my #1 favorite word processor. It's extremely simple, doesn't require being online to work, and is free as long as you have a Mac or an iOS Device.

You can turn off suto-correct features like making short dash long. You can also create custom template with your own styles for every new document. Which would give you line spacing and paragraph spacing you like. And changing default font back to Arial from the devil known as Calibri.

The trick with word is to know what you want your document to look like before you start. If you always want a specific line spacing then setup a template to start from (for example). 

 

But people always go straight into writing and say "ill format it at the end" and experience tons of issues with the text "doing random things". Setup your document first and then start writing and you wont have many issues (this is especially true for if you will want a contents page on the document, you need to use headings so that the contents is formatted correctly, many people forget this). Alternatively, as has been suggested, if you don't need all the features of word then simply don't use word, there are other options available that will work just fine and are more simple.
