For my preference I would have the single monitor set up.

Dual monitors all the way, I prefer the 2nd smaller one offset to the right though

The 2 monitors look kinda ugly IMO. +1 for the single monitor

What should i change on the second set up? it is located in between the kitchen and the living room in a 'corridor/passageway' place.

I dont like one of the monitors. Too boxy. It also looks crammed for space.

Keep the bigger main monitor right in front of where you sit as if you only had one monitor, and then have the smaller one to the right on that one, slightly angled toward you

I wouldn't be comfortable with monitors that don't have identical panels. The color differences would be bothersome for serious work/play.
