2x GTX 980's or 1 GTX 1060?

I recently acquired 2 980's for free, would two of them in SLI be better than just one 1060?

Yes, the SLIed 980's non TI will be faster then a 1060 6GB.

They're founders edition cards, or whatever they were called when they were released. Would that make a positive or negative difference?

Not at all,  however your cooling on the card might not be very good with a single slot blower fan.  So I don't think you can reach a max stable OC with this card, thats all.  However you can still setup fan curve and overclock and just trial and error it.

from one side a possitive, from one side a negative

 

positive: generally good silicon used

 

negative: it's a blower, so it might run hotter

 

from my testing with my 1070 ti sc black and the 3dmark 4k pc (which is a 980 sli) I outperform it on a oc, but go on par on stock

I'd run one, sell the other while it still has decent value. Then upgrade to something in the Fall.

To add - only in games that can take advantage of SLI.

I know two of them performed better than one of my 1080’s. Wasn’t close either. 

 

Reference blower cards are better for sli anyway. 

 

Should be able to get $200usd each, perhaps more. Haven’t really checked the market for then as 1070’s for for 200.

Depends where you live, but I'd imagine you can get $200 CAD/each.
You have to look at your local listings, and price accordingly.
