Thought on setup, this will be running a VM or two windows server, and Windows 10, hosting Plex, Running ICS for internet, day to day stuff, some gaming mostly racing games and First person shooters. 1440p on the monitor i chose just want to try to keep it around 60fps playable.

Prices have been modified to the price where i can get it the cheapest, Micro center, newegg, amazon, performance-pcs.com

EDIT:

I already have a 360mm rad and all fittings, and a D5 pump just have to swap from Intel to AMD, power connector on the pump, and going from a drive bay res to a tub res. Also switching color tubing out from blue to red.

All the other options around that price without going up to the 120+ seemed worse. I won't really be storing anything on it that won't get backed up to my cloud storage. At the same time though i don't like to deal with headaches. Im just at the edge of my budget with taxes and s+h where it applies

I still got plenty of time to think it over about a month or so if i do i might go with this

I think the WD black would be more than enough, plus im not a fan of samsung in anyway. They remind me to much of apple, overpriced, and on a high horse.

If the easy store is something through the USB interface, then RIP. I'm assuming that its like an enclosure that has an actual HDD inside of it, so that'll be fine. My only recommendations are that you get a better PSU, and get a better GPU for 1440p gaming. An RTX 2060/GTX 1070Ti/Vega 56 (overclocked a little) is the starting point for 1440p gaming.

Take a look at this PSU tier list. Anything in Tier A to Tier C is ok for buying.

Thanks for the link, I'll take a look at it. Been thinking of going up to a rtx 2060 or vega 56. The GPU will be like 20% gaming and 80% transcoding. So that really what i'm looking for and nvidia has a driver lock on that won't transcode more than 2 streams at once. Sometimes i have 3-4 streams running and i plan on transcoding everything i have to HEVC and adding in 4k moving forward as i have 2-3 people that run off my plex server remotely not including anyone inside my network 2 stream limit would put a damper on things.
