Wildly Varying Temperatures

I'm not sure if there's something wrong with my cooler or the sensor that tell me my cpu's temperature, but according to Core Temp My processor keeps going from 52 degrees C to 41 degrees C and I can hear my fan rev up each it does it.

CPU: Ryzen 7 1800x OC'd to 3.8GHz

MOBO: Asus ROG Strix B450-f gaming

COOLER: Corsair H60 (120mm AIO)

Looks fine to me, your CPU load went up so the temp went up. If the fan revving is annoying adjust your fan curve so it doesn’t spin up till higher temps.
