now, if i play through the game in UVHM, can i return to my normal playthrough and have it as a seperate game? or will it delete my normal playthrough.

You can go back to previous modes that's for sure although I'm not sure how to do it but iirc, you do it on the main menu where you bring up the select character option and when you select your character it would ask what mode you would like to play on.

Your story progress is separate between NM, TVHM, and UVHM (but not OP levels).  You can't replay Normal mode, but if there are side-missions or DLCs that you haven't completed in Normal Mode, then you can complete them once each in TVHM and UVHM, without one playthrough affecting the others.

 

tl;dr:  Yes, you can return to Normal mode whenever you like.
