In general, you can tell something is extremely safe/stable if every time it goes wrong it makes the news.
You know what doesn't make news every time? Automobile crashes, because there's so many of them
The 1080 Ti is about the same performance as a RTX 2070 Super (they're actually tied in many games). And the 2060 Super is not strong enough that raytracing would matter on it.
So go with the 1080 Ti. I actually bought one myself 2 months ago for 4K games and I'm very happy with it.
As someone who didn't play Nintendo games during my childhood, it's impressive to me how much loyalty people can have to a company that is very clearly on the way out and is turning very violent on its death throes.
This is not the first time Nintendo decides to make a move that suggests they're constantly in the defensive and it makes them look desperate. That's my perspective.
