Assuming that you don't have any other hardware for your P build, I would go for i7 6700k.
I don't know why anyone would choose older/slower CPU for same price, for new build.
So yeah i7 6700k is better. get that one!

Do you like 4K resolution?
Do you need 2 monitors?
Do you like curved screens?
I would go for 2x 1440p for myself, because I can play games on one and other stuff on another monitor.
I was using 4K for few days and everything was so small, and just couldn't get used on it
1080p is old, so I don't like that
So 1440p is perfect spot for me.
For you? Your decision.

yeah i think it costs around 30 to 50 grand or ever higher if you want more features or better connectivity but generaly i think for what you are asking its as much as i said for a pretty decent server(have in mind that i am not a profesional or have a networking company)
