How was write caching enabled to get those insane write speeds? I have a UPS so it is safe for me to enable, but my Samsung Magician does not have that option.

If you go to Device Manager and access the drive or pool properties from there, you should be able to enable/disable Write Cache under the Policies tab. Though it's usually on by default unless you're running Active Directory on that drive, to my knowledge. Bear in mind that there are other points of power failure between the UPS and your drive, namely the PSU.

If you want good hardware recommendations, please tell us how you intend to use the hardware. There's rarely a single correct answer.
