Hi, so recently I got an ultrawide monitor, 2560x1080p, and I came from a 1920x1080p monitor.

Back on 16:9, I used to get 230FPS averages on CSGO, but now on 21:9 with the same CSGO settings, I get anywhere between 120-150FPS.

Fallout 4 is a different story, both resolutions yielded the 75FPS cap due to both monitors being 75Hz.

Is there a specific graphic card tier that is comfortable for use with an ultrawide? I currently have a GTX 1060 3GB paired with an i5-8600K clocked at 4.7GHz 1.175V.

Well, a GTX1060 is generally good enough for 1080p and 1080p ulrawide. If you want more performance, the next tier up is GTX1070 / RX Vega 56.

you may be running out of V ram and might need a to step up to a card with more is my thought on this  since you have a 3Gb card

Yeah, this 3GB GTX 1060 choice is starting to bite me hard.

if you want to upgrade maybe an rx590? unless you have gsync

My new monitor has AMD FreeSync, so actually an AMD card would be sensible, but since I have a GTX 1060, I can't really warrant an upgrade yet.

Also, isn't the RX 590 essentially an RX 580.1?

it is a rebrand, but it still beats the 1060 and is slightly better. but if you can find a used 580 on the cheap on oc it that might be worth it as well.

I'm fond of sticking with Nvidia, particularly the next iteration of the RTX cards, perhaps another once another generation of graphics cards come up, I'll look into the RX lineup.
