Looking to pick up a 1070, and looking at pcpartpicker there are so many options, including multiple options from the same vendor i.e.

MSI GeForce GTX 1070 ARMOR 8G OC

and

MSI GTX 1070 GAMING X 8G

and just skimming I see a ton from EVGA. Given I am doing an ITX build, the only thing I can really think of needing to consider is making sure the video card isn't TOO long for the case. Beyond that (and outputs, though even there they all seem to comfortably cover the bases), what on earth are all the differences between these cards? Do I just go with the cheapest option at the time?

Not bought yet either, but either the Node 304 or Nano S probably

Often times you will see a 'max GPU length' listed for cases. You want to make sure that number is bigger than the length of the card.

As for what 1070 to get, what is your budget?

I'm still trying to understand what the difference is between them all. Is it just down to quality of the fans/components? Going to be doing zero gaming, but will be doing photo + video editing

You don't need a 1070. Save some money and get an RX580 or RX480.

Two main differences are customer support and the quality of the cooler. EVGA has both high quality coolers and good customer service if you need help or run into an issue.

How about a Founders Edition then?

I WILL find your ITX build thread, and I WILL recommend the SIlverstone Sugo SG13B

Primary PC:

i7 8086k - EVGA Z370 Classified K - G.Skill Trident Z RGB - WD SN750 - Jedi Order Titan Xp - Hyper 212 Black (with RGB Riing flair) - EVGA G3 650W - dual booting Windows 11 and Fedora Linux - Black and green theme, Razer brainwashed me.

Draws 400 watts under max load, for reference.

PSU tier list

How many watts do I need?

PSU misconceptions, protections explainedgroup reg is bad
