I'm currently using 8gb of Kingston hyper x memory @1600 with a 3570k and gigabyte z77x ud3h(dual channel).

Is it worth it to upgrade to something that runs at 1866 or more? If so, what would you recommend and how much extra performance would I get in everyday tasks/games?

Don't bother, 1600 is plenty fine for the intel platform.
i Agree it no use spending more money on it only reason im getting 1866 is because i found some dimms that are like $10 more than 1600 but ya 1600 is fine if you already have it no need upgrading

I tried overclocking my ram to 1866 from 1600 but seen virtually no improvement so nah it wouldn't be worth buying slightly higher speed ram in my opinion.

Don't upgrade because you won't notice a difference in intel platforms in real life.
