What will happen if I install a new empty sata ssd into an old system with an existing hdd inside it without transferring the data from the hdd to the new ssd or install windows onto it. Will new data be stored in the ssd or would data from the old hdd be transferred to the ssd or would the ssd just stay dormant until the old hdd is full.

You get another drive in where you can put stuff in. Nothing gets transferred into it until you do so.
