Should I buy them?

Some guy brought in 4 MSI GTX 970 to to sell on consignment $110 each, the shop owner tested them they work fine. 

What do you guys think should I get 1 or 2 of them to mess around with?

If you need a GPU, the 970 will beat anything else you can get at that price. I often recommend people with low budgets get a used 970. They are cheap, perform well comparatively, and are very plentiful.

Nah I just thought I should get one to use for practice to take apart and put back together

If you get a non-functional one how do you test if you put it back right

I mean, there's not too much to dismantling a gpu....you can only take the backplate and the cooler off, there aren't many parts.

Anywhere from very little, to nothing if possible, for a non functional one. There's loads of sellers on ebay that get job lots of broken GPU's, and sell them individually for low prices. I was looking at a GTX680 that had 'no output, black screen' and it sold for £10. Maybe ask around local computer shops to see if they have dead hardware?

For a working one, you'll want something from the last 6-8 years, because coolers on the very old cards are normally a different design(But still not worlds apart having said that). And obviously expect to pay a little more. But aside from that anything goes! The cards in the last couple of years have heatspreaders on the underside, but really, that's nothing complicated just a few more screws to remove...

Wow thanks for the offer and the help. 

I'm wanting to learn about taking reference cards apart and learning more about water-cooled gpus as I'm learning to design my own pc case, it can help me design my case better for water cooling too

Aah that sounds cool! Unfortunately the only reference design card I have is an nVidia 9800 GTX+, which is ancient history and probably not very useful for that kind of purpose.
