I'm pretty sure those cards are overkill for any 2k 60Hz monitor, but since it isn't a monitor for gaming I was wondering:
Would there be any problems gaming in it? (aside from the 60 FPS cap)

Nope, only real difference between 'gaming' and non-gaming panels is response times and and extra features such as freesync and g-sync.
