Seems fine. You can probably OC the RAM anyway. 2800 is actually the range that both Ryzen & Intel hit highly diminishing returns. (Unless you're rocking a 1080 Ti and a highly OC'd CPU.)

But yes dual channel is a lot better than single channel.

Just go for the 2666 mhz kit if you want, there really isnt any performance difference.

of course, just as the second gen ryzen is supported on first gen mobos.

Just the second gen motherboards have more features and better vrms, especially the msi ones.

Yes. First Gen motherboards support 2nd gen CPUs, though there can be some issues with older BIOS not being up to date enough to boot. (Which requires either the AMD Boot Kit or another Ryzen part to boot with.)

Whatever you're most comfortable with. We generally recommend Dual Channel, just as it makes future upgrade costs cheaper, but single channel, for your build, is more than great.
