So, I'm debating on if I should get a G sync monitor or not. If I'm using a 1080Ti and planning on getting 2 monitors for viewing and 1 for gaming. Should I or should I not purchase a G sync monitor for gaming?

2) What's the benefits of G-Sync and what does it do?

Is it like if I receive low FPS it starts to lag and throttle?

If you can afford the premium for it, definitely. However, without it you won't care about it. Im using a  freesync monitor with a 1070 and its been absolutely fine.

It just helps with exactly what you said, if you receive under 144fps on a 144hz monitor it will actively sync your frames so you get no tearing.

G-Sync changes the refresh rate of the Display itself. So say you're playing something on 4K at 60fps, and get a drop to 45. G Sync will drop the refresh rate of the display itself to 45Hz, basically it just matches your fps within a certain range. Makes it buttery smooth since there's no screen tearing or other such stuff. For example, my cousin can play PUBG at 110fps on his 144Hz monitor with no stutter or lag or anything because G Sync just matches the fps his GPU puts out. You'd need to get a pretty serious drop in order to notice lag or stutter.
