How much power will my system draw?

That's not a great psu and I'd recommend sticking with something like the 1060 / 1070. A 1080 should still be fine but I wouldn't feel very comfortable about it.

I5 8400 stock cooler
Zotac mini gtx 1060 6gb 175 mhz core oc 
12gb ddr4 2400 MHz (by crucial)
1tb 7.2k hdd 
Wd 120gb ssd 
60cm led strip 
5 case fans 
Gaming keyboard 
Gaming mouse 
Gaming headset

I have tried it in to many psu calculators but can’t get an accurate answer.

Like 200W, maybe a tad more. PSU calculators are crap and overestimate by a ton.

200w is the total system power draw for the specs mentioned in the OP. The 1080 pulls about ~200w at load on its own. https://www.tomshardware.com/reviews/nvidia-geforce-gtx-1080-pascal,4572-10.html

As mentioned already, 1080 should still be fine but I wouldn't feel very comfortable about it.

Looking for one which will be suitable for the upcoming gpus which draw about 280w just for itself looking to spend about £60
