Why is it that  my Wi-Fi speed increase when using Facebook but decreases when I use other apps ?

I use an app on my phone which measures the speed in real time as I watch vids online or download 

But I don't understand how or why it shoots up when watching fornite videos on Facebook but becomes normal when using YouTube at max resolution btw

qos is a setting of priorioty of internet packet service, that allow to choose most important service

Could also just be the difference in quality/bitrate in facebooks cdn vs youtube.

Maybe the other apps use more bandwidth than Facebook.

lol, that's just active traffic.  There could be differences in bitrate of the video, you're also loading other page data on facebook when you scroll around.

 

The data rates listed are nothing major, I don't even see why you're concerned.
