First Ever PC Build!

Hi all, im looking to build my first ever gaming PC later this year, and would like some help picking parts. I already know a fair amount about PC's as I've been in this community for 3-4 years now. I have a few basic specs in mind, but am open for suggestions and recommendations.
1. Budget

My budget is quite large, considering I need to buy every component (except mouse, keyboard). I will spend up to around 2500-3000 AUD (1800-2200 USD). Im from Australia and would like to source parts locally to avoid huge shipping costs. I also need to include a monitor in the budget, as I dont currently have one.

2. Aim

This PC is for gaming and 3D modelling and rendering. I need to have a NVidia card as blender (the 3d software I use) only supports CUDA acceleration. I also would like to have a CPU with a high core count, for simulations and multitasking.

I have a few basic specs, but would like some help fleshing them out a bit. Also, I WOULD like to do a moderate overclock on the CPU and GPU.

3. Basic Specs

1. GTX 1080 (need brand recommendations)

2. Ryzen 7 xxxx CPU (would like recommendations for the CPU)

3. 16Gb of RAM (would like to go higher, but ram prices are so high)

4. 1440p monitor minimum (exact model recommendation)

5. SSD + HDD storage (256GB + 2TB should be fine, brand recommendations please)

Other than that, I really dont know exactly what I should go with. I would love some recommendations for mobo, monitor, case, mobo, fans and any things else that I would have inevitably missed.
(NOTE: Monitor can not be more than 360mm vertically (without stand) and needs to be VESA compatible for wall mounting)
I dont need exact specs but I would love for some tips and brand recommendations, and anything i should look out for.

For this monitor, you'll have to get a VESA adapter. Other than that, everything you need is included.

Wow, I didnt think I could get a 1080ti in there as well as the Ryzen 7. The max rated memory speed for the R7 2700 is 2933MHz, would I be fine with that memory? Would I have to underclock it or would it not be compatible??. Are there any compatibility issues with this setup that dictated the case choice that I would need to be wary of if changing the case. Also thanks so much for the help :D

You can run the memory at a higher frequency. It should work. 

The case choice, because it performs fairly well, and because the price was decent. PCPP has a compatibility filter.
