I need you to finish this build considering all those Spectre&Meltdown updates, Windows updates, BIOS updates etc. 

4 components missing. CPU, CPU cooler, Power supply and Motherboard.

Intented use: Gaming, work (light photo&video editing, bunch of browser related work, MS Office ofc :) )

That's probably way more than you need to spend. Even high end you're only looking at around half that. Both these come to about 550€ (prices shown are in USD).

I would rather go either Aorus Gaming 7 or Maximus X Hero for motherboard, those seem to be among the best quality ones... I was thinking at least 650W PSU and X62 Kraken for 8700K hottie

Okay? Seems like you have already selected the parts you want.

An 8700k and GTX1080 won't use more than 550W.

I haven't selected anything yet, just saying that those seem to be higher quality ones :) Won't use more than 550W? What about overclocked 8700K and GTX1080? I would rather have some Watts to spare :)

Get the Z370 Extreme4 which is a excellent overclocker and really good deal. 550w quality PSU will be enough.
