I own a monitor and all the other stuff so no need for them.

I bought everything Except the ITX Mobo at a local shop that was clearing out as it was closing down at literally dirt cheap.

The Mini Itx I would like to keep for gaming and the atx for a server.

I am willing to buy any parts needed and my budget in kinda open as long as it wont be a waste

Without model numbers for all the parts it is not possible to be accurate.

The i7-8700K is a gaming cpu. The H370i motherboard will not allow it to be used to its full potential.

The ATX Codex motherboard is designed for overclocking, it's not going to be used to its full potential.

Unfortunately given the case limitations you are going to end up with some fairly ugly configurations unless the motherboards are replaced.
