Go with a Coffee Lake cpu. An i5-8600K is a touch more powerful than the i7-7700K.

I like your build but I would personally go for the TridenZ RAM since they cost basically the same thing and in my opinion looks better.

Yes the TridentZ RGB are very nice. When I picked the Corsair RGB I wasn't aware that G.Skill has added RGB Fusion support to the modules.
