.Planning on starting my first build and hoping it will be built to last at least a few years and remain capable

.Ive listed below what i presume would be a more then capable rig for my needs however anything ive overlooked or other suggestions i am completely open to

The system you should probably buy, being a reasonable video editing machine and 1080p gaming machine

 

save the rest of the budget for when next generation GPUs are out, and pick up a 4k IPS free-sync display in the mean time.

Or use some of that money on a gigabit or better NAS and that way your local system doesn't need any hard drives.

Also be careful with the screws on that 240mm AIO, if you really over tighten them they may puncture the tubing inside the radiator, works fine otherwise, have one on my R7 1700.
