I am planning to get a set of 5 Cooler Master MasterFan Pro 120mm RGB fans.

But I already have 2 LED strips connected to my rig and the MoBo I'm using only has two connectors, will using a 1 to 2 and a 1 to 5 RGB splitter work? 

I am worried about frying my board and/or the RGB controller on my board

I'm using a Gigabyte AB350 Gaming 3 board if that makes any difference(I don't think it should matter though)

Look in the manual, check the current limit on the lighting port, then find out the current use by each strip and do the math.
