would my PC experience any bottlenecking (if that's a word)? And any tips for the parts (i know the psu is overkill but i'd like to keep it :))

Ryzen likes faster ram. As for SSD, I'd go with Samsung or Crucial. Assuming this is in CAD or AUD at those prices?

It's enough RAM, it's just not fast

16Gb is more than enough and that SSD is just fine. Samsung is pretty expensive.
